Christmas Avocado Ideas

ID-10056347The year is very quickly coming to an end. With Thanksgiving already here, it’s time to start thinking about Christmas. While Christmas dinners typically consist of ham, maybe turkey or roast beef, mashed potatoes, green beans and a ton of desserts. But just because your typical Christmas menu doesn’t consist of avocado, it doesn’t mean you have to give up one of your favorite fruits for the holiday. Here are some fun ways to add avocado into your Christmas meals.

Rub For Your Turkey

If your family typically eats turkey on this holiday, consider trying out this run. The herbs give the turkey a delicious flavor, and the creaminess and oils in the avocado help make the turkey extra-crisp on the outside and juice and moist on the inside.

Ingredients:

1 large avocado, peeled and pitted

4-5 large prigs of rosemary, leaves taken off

5-6 cloves of garlic, peeled

1 cup of avocado oil OR extra virgin olive oil

2 tablespoons of salt

1 tablespoon of pepper

In a food processor or blender, grind the avocado, rosemary and garlic into a paste. Slowly add your oil until it becomes thick and creamy. Turn your turkey upside down and rub half the mixture on the bottom and sides of the turkey, then sprinkle with salt and pepper. Repeat on the top of the turkey as well.

Avocado Dip

If you’re not into adding avocado to your main dish, how about adding it to your sides? Here is a delicious avocado dip to try this Christmas.

Ingredients:

2 ripe avocado, peeled and pitted

2 teaspoons lime juice

1 small red chili

Salt and pepper to taste

1 tablespoon taco seasoning

1 300g jar of sour cream

1 ripe tomato, deseeded and diced

I tablespoon coarsely chopped coriander

Place your fruit in a bowl and mash with a fork until smooth. Add lime juice and chili, and salt and pepper to taste. Spoon this mixture into a serving bowl.

In another bowl, combine the sour cream and taco seasoning, then spread it evenly over the avocado mixture. Cover this with plastic wrap and place in the fridge for 2 hours. While that’s setting, combine the tomato and coriander in a small bowl. Add salt and pepper if needed. Sprinkle this mix on top the set sour cream. Serve with corn chips.

Avocado Tree Salad

Instead of a traditional green leafy salad, try something different this year. An added bonus? This salad is really festive!

Salad ingredients:

2 firm-ripe, Fresh Hass Avocados, halved, peeled and seeded, or more as needed

1 lime, juiced

1/4 tsp. sea salt

1/2 cup pomegranate arils (seeds) and/ or fresh raspberries

1 Tbsp. dried cranberries

1 green onion, white only, sliced into rounds

1 slice Star fruit or pineapple

6 small chives

1 cup fresh crab meat, picked over

Chili vinaigrette ingredients:

3 Tbsp. extra virgin olive oil

2 Tbsp. white wine vinegar

1 tsp. chili powder

1/4 tsp. dry mustard

1/2 tsp. cumin

1 Tbsp. cilantro, chopped

1/2 Tbsp. grated lemon zest

Slice each avocado half into 6 slices and sprinkle them with lime juice. Arrange the slices in the shape of a Christmas tree on a platter, making sure to leave at least 3 inches at the top and bottom of the tree. Sprinkle tree with salt. Arrange your pomegranate seeds or raspberries, cranberries, and green onions on tree like ornaments. Place your star fruit, or pineapple cut into the shape of a star, at the top point. Add chives across the avocado slices and arrange your crab meat at the bottom of the tree to look like snow. Serve with vinaigrette. Check out recipe here.
